«When you buy these two wonderful homes, you feel a special sense of responsibility: you've not just become an owner, you've become responsible for a much broader vision. It's a question of social issues, of employee well-being, but also of harmony with the village, the associations and the elders. Suddenly, you're part of an exceptional living environment: the river, the remarkable trees, the outcrops of water. You'd never think of pouring concrete or uprooting trees. In the end, we're not the real owners of these inhabited places, we're just there with them.»
Séverine PÉTILAIRE-BELLET, owner of Hostellerie de Levernois and Château Sainte Sabine.
All this is reflected in commitments that go beyond waste reduction and optimization, cardboard compactors, but above all in the creation of a 2700m2 organic vegetable garden, a henhouse, five beehives with a local species of Burgundy Black Bees, a conservatory orchard, a flowery fallow with melliferous plants, and more... all managed according to the principles of permaculture, organic and biodynamic farming.
Château Sainte Sabine and L'Hostellerie de Levernois are committed to this approach at all times. For example, the pool house is covered with vegetation, the parasols on the Bistrot terrace give way to natural shade, and almost 8 tonnes of bio-waste are sorted and recycled by a Dijon-based association, which redistributes the compost to local farmers. Local businesses also contribute to this spirit of proximity: poultry, lamb, pigeon, fruit and vegetables to the maximum, not forgetting local artisans: candles from the CasaVycha candle maker (Puligny-Montrachet), soaps from Savonniers du Morvan (Moux-en-Morvan), ceramics from Atelier JuLy (Meursault), Secrets Incomparables spreads (Beaune).
«For us, it's fundamental to be in the wake of Corporate Social Responsibility (CSR). This voluntary integration by companies of social and environmental concerns into their activities is for us a matter of course, and a sincere guide to our decisions and orientations. Beyond a good conscience, it's also a fulfilling motivation for our work and decision-making.»
Axel NÉRIN, General Manager of both hotels.
